Cooking | Cooking News | Tommy Houston and his Chequer Pig Barbecue Team promise a bit of good ol’ Southern hospitality when they formulate their debut at the Labadie Pig Gig this weekend.

”We bring a slight a bit to the table,” Sam Houston said. ”We bring Southern hush puppies. They are the bulk of a little egg. No One else is doing that on the circuit. It’s our little claim to fame. We’re from down South. We’re all about hospitality and good Southern cooking. We’re bringing that to Michigan.”

Sam Sam Houston’s team uses Virginia hams for their sandwiches, rather than the customary pork hit or shoulder.

”It’s a little bit different,” Houston said. ”It’s a little leaner. We use a special sauce I developed just for that - a vinegar, sweet Worcestershire rudeness.”

Of path, the Checkered Pig Barbecue Team will be serving up its famous ribs - ribs that have won some 60 awards since the team started challenging six duration ago.

Houston got his start cooking at the Martinsville (Va.) Speedway, a NASCAR track. He later decided to get into the barbecue and opened Sheep R Us in Martinsville. When he took a competition team on the road, he went back to his pedigree and with an all-racing premise, the Checkered Pig.

Wendy Dore, planner of Pig Gig, says his booth is really rather to behold.

”It’s the NASCAR premise,” she said. ”The stand is bright and fun and inviting, plus he’s got a great product.”
